The leaves and seeds a Mexican kitchen cooks with: avocado leaf for barbacoa and beans, hierba santa for tamales, coriander seed for pozole.

Leaves that go into the pot with the food

These herbs are cooked, not brewed. A dried avocado leaf goes into a pot of black beans or under a barbacoa. Toast it for a few seconds on the comal first to wake up its scent. Hierba santa is wide enough to wrap a tamal or a cut of meat on the grill, and it goes into moles and pozole.

Whole coriander seed is a different thing from fresh cilantro leaves: it tastes citrusy and a little sweet, and it goes whole into menudo, pozole and caldo de res, or toasted and crushed into a rub. Ground white sage is strong, so start with a pinch in pork or beans.

Questions about YERBERO herbs for the Mexican kitchen

Can you cook with YERBERO avocado leaves?

Yes. The bag sells them for tea and for seasoning: they flavor mixiotes, barbacoa, black beans, broths and marinades. Toast a leaf briefly before it goes in.

Is the YERBERO hierba santa you cook with the same as hoja santa?

They are two names for the same plant, Piper auritum. We sell it two ways: whole leaves for cooking, and cut leaf and stem for tea.
