Leaves wide enough to wrap
Count 25 or more whole dried leaves of hierba santa, Piper auritum, in this 1.05 oz bag from Mexico. The plant is also called hoja santa and acuyo. The leaves come whole on purpose: each one can go around your tamal or a piece of fish.
In Oaxaca this is a kitchen leaf. Tamales are wrapped in it, it goes into mole verde and into pozole, and cheese or fish is grilled inside it. Expect a peppery, earthy flavor with a faint sweetness under it. For a cup of tea, pick our cut hoja santa with its stems, and save these whole leaves for the steamer and the grill.
In the YERBERO catalog, Hierba santa entera is filed under H in the herbolario A–Z, next to Hierbanís.
