Whole golden flowers
Calendula flowers from Mexico, Calendula officinalis, come whole and dried in two sizes, 2 oz and a full pound. The same flowers are sold as marigold flowers and, at Mexican markets, as mercadela.
The bag prints a simmer: a tablespoon of petals in a cup of boiling water for 15 to 20 minutes, then 5 to 10 minutes off the heat before you strain, and the water turns the gold the bag talks about. The petals go into baking too: pull a few from the flower heads and press them into the top of a loaf, or stir them into a cookie dough for a floral touch, as the bag suggests. You want the pound bag once both your teapot and your oven draw from the same supply, and the 2 oz bag until then.
In the YERBERO herbolario, Flores de caléndula is filed under C in the herbolario A–Z, next to Canutillo.
