The sweet and spicy mole of Xico
This mole comes from Xico, Veracruz, as a 1.1 lb bag of paste. Mulato, guajillo and ancho chiles carry it, with plantain, raisins, sesame, peanuts, crackers, Mexican chocolate, lard and spices like anise, cloves and cinnamon. The bag calls the flavor sweet and spicy.
The bag asks for one part paste to two parts broth, chicken, beef, vegetable or water. Dissolve it over medium heat, stirring, add broth until the sauce is as thick as you like, and keep stirring four to five minutes. The plantain and raisins are what set it apart from our almendrado, and you taste them in the sweetness. Read the allergen line before you cook for guests: peanuts, sesame and the wheat in the crackers are all in the paste.
