A paste for Puebla's mole
Mole poblano from Puebla comes as a 1.1 lb bag of paste. The label asks for twice as much broth as paste, from chicken, beef or vegetables, or plain water, dissolved over medium heat and stirred four to five minutes once it is as thick as you want. It also warns that the paste contains peanuts.
The bag talks about dark chocolate, roasted almonds and a smoky aroma, with tomatoes, tomatillos and peppers in the base. Spoon it over roast chicken, beef or pork, or over vegetables. The broth decides the thickness, so add it a ladle at a time and stop when the sauce coats the back of a spoon. A full bag makes mole for a family table, and leftovers warm up the next day with a splash more broth.
In the YERBERO collection, Mole poblano is filed under M in the herbolario A–Z, next to Mole ranchero.
