A pale yellow bean from Sinaloa
Frijol mayocoba, also sold as peruano or canary beans, is a pale yellow dry bean from Sinaloa, triple washed, as the bag says. You choose a 3 lb or a 5 lb bag.
It cooks down to a buttery texture, and you see it in refritos, in soups, and spread on tortas, sopes and tostadas. Mash a ladle of cooked beans with some of their broth and you have the spread for a torta in a minute. The 5 lb bag is a pantry bag for a house that makes refritos every week, and the 3 lb one is plenty to learn the bean.
In YERBERO herbs and teas, Frijol mayocoba is filed under M in the herbolario A–Z, next to Mole almendrado.
